It all began in the 1920s in the Liberdade neighborhood of São Paulo, when a large Japanese community moved to Brazil to fill the labor shortage in the coffee industry. Over the decades, Japanese people in Brazil have been developing fusion cuisine, combining their own culinary techniques and specialties with local ingredients and herbs, thus giving rise to Japanese-Brazilian street food.

Laura and Alexis Offe, French siblings living in Hong Kong, have chosen to showcase this original and exciting cuisine with the opening of Uma Nota, two years after their first restaurant in Hong Kong, just a stone's throw from Le Sentier in Paris.
