Grapefruit Caipirinha Cocktail

Serves 2

90 ml Dom Bré Jequitiba or Costa Rica Jequitiba cachaça

1 small untreated grapefruit (better if organic or sustainably grown)

4 tablespoons of sugar (cane sugar if possible)

Ice cubes

Preparation

Slice the grapefruit into slices widthwise.

Set one slice aside. For the "unbitter" version, remove the white part of each slice.

Cut the grapefruit slices into small wedges and arrange them in the glasses. Add the sugar, then muddle the grapefruit and sugar well to combine.

Place the ice cubes in the glasses and pour in the cachaça. Stir well.

Cut the remaining slice into small wedges.

Garnish each glass with two grapefruit wedges.
